Roast Potatoes with Herb Butter

Ingredients:

Directions: Scrub potatoes, rinse and dry. Cut potatoes crosswise into 1/4 inch thick slices without cutting through potato. Slices must stay attached. Place each potato in center of 8X8 inch piece of foil. Mix remaining ingredients with butter. Brush each potato with butter mixture, coating he inside surface of each slice. Roll up edges of foil and crimp to seal. Bake approximately 50 minutes or until done.
