Shepherd's Pie

This recipe is from the Great Camp Woolsey Cookbook, courtesy of the Ottawa Area Girl Guides.

Brown:

Add: Place in a baking dish and top with mashed potatoes. Bake at 375 F until well heated and potatoes are lightly browned.

Thanks very much to Lesley Tennessen, who sent me her favourite recipe for Shepherd's Pie.

Ingredients:

3 lbs ground hamburger meat
2 onions
salt and pepper
1 box instant mashed potatoes
3 cans of corn (either creamed or kernel or you can combine)
8 oz shredded cheddar cheese
(milk and butter may be required, depending on the directions for the potatoes)

Directions:

In a 12-14 in Dutch oven, brown the meat and onions. When done, drain the extra fat away. Season the meat with the salt and pepper to taste.

In the meantime, mix up the instant potatoes according to the box directions. Open the cans of corn, drain away liquid from the cans of kernel corn. Layer the corn on top of the cooked meat in the Dutch oven. Top with potatoes. Top with cheddar cheese. Put the lid back on the Dutch oven. Put a few coals back on the lid (maybe 8-10), and place the pan on top of some coals too for about 10 minutes. Let the cheese melt and all the ingredients warm through.

Pull the lid off without getting the ashes in and set aside. Enjoy! Serves 12 people or 9 really hungry adults.
