Curry Chicken
(serves 6)

This comes from the Camp Woolsey Cookbook, 2011. It was one of the most popular dinners we did at camp this summer.

Ingredients:

6 boneless, skinless chicken breasts cut into strips
¼ cup canola oil
1 large onion, green pepper diced
2 cloves garlic chopped finely
1/3 cup curry powder or to taste

Directions: Heat oil in a large skillet over medium heat. Add onion, green pepper and garlic and sauté until soft and golden brown. Add chicken and cook till golden brown and no longer pink inside. Slowly stir in curry powder and a little bit of water to make sauce. Once ingredients are blended together. Cover skillet and simmer over medium low heat for about 15 minutes.

 (Note: Make sure that you stir and that dish does not burn, as curry powder burns very easily!)
