Fajitas

This comes from the Camp Woolsey Cookbook, 2011. It was one of the most popular dinners we did at camp this summer. One of the things I like about this meal is that it offers choice - the girls can have the meat, the veggies, or both, and top their fajitas with whatever they want.

Ingredients:

Meat (either chicken or beef)
Onions
Green peppers
Fajita seasoning mix
Tortillas
Salsa
Sour Cream
Shredded cheese

Directions: Cut meat into long pieces.  Brown in fry pan. Add fajita seasoning mix. Once the mix is well mixed into the meat, add the recommended amount of water. Cook until water is evaporated.

Cut onions and green peppers lengthwise. Brown in a separate fry pan.

Campers take a tortilla, and add the meat and veggies. Top with salsa, sour cream, and shredded cheese as desired. Teach them how to roll the tortilla so that they can eat neatly.
