Quesadillas

Thanks to Barb Robinson, who shared this recipe with me from her Guiding Gourmet session at CM'99 Manitoba.

Ingredients:

8 Tortillas
6 oz Grated Cheddar Cheese
1 Onion
1 Green Pepper
1 Tomato
Mushrooms
Chilli Pepper to taste
2 Tablespoons Oil
Equipment:
One burner stove
Sharp knives
Cutting boards
Fry Pan
Lifter
 Instructions:
Quesadillas are tortilla turnovers. Fill them with cheese, or cheese and chopped up veggies. Roll the tortilla into a cylinder. Cut the cylinder into 2" pieces. Use the Oil to lightly fry the pieces in a fry pan.
