Granola Bars - Version 2

Here's another recipe, sent to me by my Dad, courtesy of a friend of his.

Preheat oven to 350 degrees.

Ingredients:

1 c. flour (I use 1/2 whole wheat and 1/2 spelt. I also add ground flax and sometimes vanilla protein powder)
1/2 tsp. baking powder
1/4 tsp. baking soda
1/2 tsp. salt
1/2 tsp. cinnamon
1/2 c. brown sugar (I use a mix of real demerrara sugar and blue agave syrup)
1 1/2 c. rolled oats
1/2 c. vegetable oil (I use half olive oil and half unsweetened apple sauce)
1 egg, beaten (I use the equivalent in egg whites)
3 tbsp. water
1 tsp. vanilla
raisins, walnuts, almonds, dried fruit, chocolate chips as you like

Directions:

In a medium bowl, combine the flour, baking powder, soda, salt and cinnamon (and flax). Stir in sugar, then the oats. Make a well in the centre. Add oil (apple sauce), egg, water, vanilla, and fruit/nuts/chips. Stir vigorously until dry ingredients are moistened. Drop by tablespoons (or shape into bars no more than 2/3" high) onto cookie sheet. Bake on middle rack for 11-13 minutes.
