Granola Bars
This recipe is from the Great Camp Woolsey Cookbook, courtesy of the Ottawa Area Girl Guides.
Combine:
Add:
Mix well. Press into a cookie sheet and bake at 350 F for 10 minutes or until golden. Cool and cut into bars.
Optional: you can also add 1/2 to 1 cup of whatever else you'd like: chopped nuts, chocolate chips, raisins, coconut, honey, etc.
Granola Bars - Version 2
Here's another recipe, sent to me by my Dad, courtesy of a friend of his.
Preheat oven to 350 degrees.
Ingredients:
- 1 c. flour (I use 1/2 whole wheat and 1/2 spelt. I also add ground flax and sometimes vanilla protein powder)
- 1/2 tsp. baking powder
- 1/4 tsp. baking soda
- 1/2 tsp. salt
- 1/2 tsp. cinnamon
- 1/2 c. brown sugar (I use a mix of real demerrara sugar and blue agave syrup)
- 1 1/2 c. rolled oats
- 1/2 c. vegetable oil (I use half olive oil and half unsweetened apple sauce)
- 1 egg, beaten (I use the equivalent in egg whites)
- 3 tbsp. water
- 1 tsp. vanilla
- raisins, walnuts, almonds, dried fruit, chocolate chips as you like
Directions:
In a medium bowl, combine the flour, baking powder, soda, salt and cinnamon (and flax). Stir in sugar, then the oats. Make a well in the centre. Add oil (apple sauce), egg, water, vanilla, and fruit/nuts/chips. Stir vigorously until dry ingredients are moistened. Drop by tablespoons (or shape into bars no more than 2/3" high) onto cookie sheet. Bake on middle rack for 11-13 minutes.
