Broccoli and Rice Casserole (Solar Oven)

Thanks to Barb Robinson, who shared this recipe with me from her Guiding Gourmet session at CM'99 Manitoba.

Ingredients:

1 lb fresh broccoli cooked and drained
2 cups cooked rice
1 10 3/4 oz can cream of chicken soup
1 cup shredded cheddar cheese
1 2oz can water chestnuts, drained
1/2 cup cracker crumbs
2 tbsp butter, melted
Equipment:
Solar Oven
Pot
Casserole Dish
Measuring Cups
Instructions:
Cook the rice - bring 1.5 cups of water to a boil.  Add 1.5 cups of rice, remove from heat.  Let stand with the lid on for 5 minutes.  Put rice into a casserole dish. Add the cheese to the hot cooked rice; stir well.  Add broccoli, soup, and water chestnuts.  Combine the cracker  crumbs with the melted butter and sprinkle over top of casserole.  Bake at 300 C  for an hour.  Serves 4-6.
