Orange Peel Muffins and Cupcakes
Take a large (navel size) orange, and cut off a thin
slice at the top. With a spoon, hollow out and eat the contents of the orange,
leaving the peel intact. Using instant cake mix (gingerbread or lemon flavours
taste good) or muffin mix, fill the inside of the orange about 2/3 full. Put the
thin slice of orange that you cut off back on as a lid. Wrap the orange in foil,
keeping the top side up. Then wrap it in wet newspaper, and another layer of
foil. Toss it into the fire. Check the cake directions to see how long it should
cook. The orange peel adds extra flavour to the cake, and it is great! The girls
actually get two desserts--one is the orange, and the other is the cake.
