Cinnamon Rolls

Thanks to Barb Robinson, who shared this recipe with me from her Guiding Gourmet session at CM'99 Manitoba.

Ingredients:

3 cups baking mix
1 ½ cups water
1 tbsp cinnamon
¼ cup raisins
2 tbsp margarine
½ cup brown sugar
extra flour for rolling
Equipment:
Mixing bowl
Mixing spoon
Measuring Cup
Rolling surface
Rolling pin
Small baking sheet or pan
Reflector Oven
Reflector Panels
Coals from charcoal
Instructions:
Set some of the baking mix aside for flouring the surface. Mix together baking mix and water.  Roll out on floured surface add more flour to make less sticky if necessary.   Spread with margarine.  Sprinkle with cinnamon, sugar, and raisins.  Roll up jelly roll style, pinching dough closed so sugar doesn't fall out.  Slice roll into 1 inch slices and place in pan.   Bake for 15-25 minutes in reflector oven.  Place coals as near as possible to the reflector oven.  Use the reflector panels to further reflect heat into the oven.
