Tinfoil Dinners

Foil dinners are great! Make sure you wrap the food in one layer of foil (shiny side in), then a few layers of wet newspaper, and then a final layer of foil (shiny side in). Suggestions for putting in your dinner include chicken pieces or ground beef, potatoes, various vegetables, etc. Salt and pepper as well as dry onion soup mix are great seasonings!

Here's an example of a great foil dinner, which was sent to my by the same "anonymous" guest who sent me the Cherry Cake recipe:

Ingredients:

Directions: Take two pieces of foil, place one on top of the other. Place all the ingredients in foil, and seal foil so that no juices can come out. Place in embers of a campfire, on a grill, or in the oven for 45 minutes to 1 hr until done. This does tend to use a lot of foil, but the meal can be eaten from the foil, and served with a salad and bread.

Here's another tinfoil dinner for you to try, courtesy of Wendy Baker.

Ingredients:

potatoes sliced very thin
ham slices, precooked deli ham or canned ham
carrots sliced thin
celery sliced thin
dried onion soup mix
cabbage leaves

Directions: Place cabbage leaf on foil. Add potatoes, sprinkle on soup, add ham slice, carrot slices and celery on top. Wrap the dinner in foil, then do the same with the newspaper (2 sheets, folded and damp), then foil again. This makes a nice parcel which is easy to have the girls carry in their packs if you're going on a hike. If you want you could have the girls make them at your home or meeting place beforehand....but should be made the day they are cooked or the potatoes turn black. You can also substitute very thin hamburger patties for the ham. As with all foil dinners, these are best cooked on a good bed of hot coals.
