One Pot Away-From-The-Campfire Dump Cake

Thanks very much to Lisa Modelski, who sent this recipe to me!

Ingredients:

2 cans cherry (or other fruit) pie filling
1 can crushed pineapple
2 yellow cake mixes (the generic brands will work) OR 4 small boxes Jiffy Yellow Cake Mix
1 large squeeze margarine

Equipment Required:

1 large Dutch oven
tin foil
36 charcoal briquettes

Directions: Using a charcoal chimney or campfire, get your charcoal briquettes hot and somewhat grey. While waiting on the charcoal, line your Dutch oven with foil (this saves on cleanup afterward). Add the can of crushed pineapple, then the pie fillings, then the cake mix and squirt the whole tub of margarine over the top. Place the lid on the Dutch oven.

Set the Dutch oven on top of 18 hot briquettes and place the other 18 on the lid. (This is supposed to be the same as a 350 degree oven) Check to see if done in about 45 minutes. It usually takes about an hour to an hour and 15 minutes. The top will crisp and brown. This recipe is nice because it can be done away from the fire while your dinner is cooking. Feeds 15-20.
