Panzerotti Pizzas

I learned this recipe from Tara (Scooby) Dominguez, one of my camp staff at Woolsey. She taught it to my on an outtrip this past summer. Very yummy!

Ingredients:

Bisquick powder
Pizza sauce
Pepperoni slices
Shredded cheese
Other pizza ingredients as desired.

Directions: Make dough out of the Bisquick according to the package instructions. Spread out a piece of tinfoil about twice the size of a dinner plate. Spread a thin-ish layer of dough on the tinfoil. Put down a layer of pizza sauce. Garnish with whatever pizza toppings you’d like. Cover with a second layer of dough; be sure to seal the dough all around the outside of the pizza ingredients. Now you’ve basically got a raw pizza pocket. Wrap the whole thing up in tinfoil, and place in the coals of the fire. It’s a bit of a guessing game when they’re cooked so monitor closely. You need to turn them over partway through the cooking process. We had some debate at camp whether it was helpful to ‘grease’ the inside of the tinfoil before putting down the dough – so you can try that if you want.
