Cereal Bars

Ingredients:
- ¼ cup of butter or margarine melted
- 40 large marshmallows
- 1 tsp. vanilla or almond extract
- 2 cups of high fiber cereal slightly crushed, such as Fiber 1, All Bran Flakes or Kashi Go Lean
- 1 cup protein powder or instant skim milk powder or soya milk powder
- 1 cupped chopped dried fruit such as apples, raisins, apricots, cranberries, coconut
- 1 cup chopped nuts or seeds such as almonds, peanuts, mixed nuts, walnuts, pecans, sunflower seeds, dried soya nut/beans, pumpkin seeds
Mix all of the cereal, milk powder, fruit and nuts together. In a separate large bowl, melt butter or margarine in the microwave. Add marshmallows to melted butter and cook in microwave about 2 minutes or until melted. Add vanilla or almond extract and stir well. Add all of the dry ingredients together a stir quickly. Using greased hands press mixture into a greased pan and let cool. Cut into 16 bars and wrap well. These keep for at least three months. Freeze for long term storage.
