Cereal Bars

Thanks very much to Agnes Pomerleau, who shared this recipe with my buddy Vicky Wallace, who shared it with me!

Ingredients:

¼ cup of butter or margarine melted
40 large marshmallows
1 tsp. vanilla or almond extract
2 cups of high fiber cereal slightly crushed, such as Fiber 1, All Bran Flakes or Kashi Go Lean
1 cup protein powder or instant skim milk powder or soya milk powder
1 cupped chopped dried fruit such as apples, raisins, apricots, cranberries, coconut
1 cup chopped nuts or seeds such as almonds, peanuts, mixed nuts, walnuts, pecans, sunflower seeds, dried soya nut/beans, pumpkin seeds

Mix all of the cereal, milk powder, fruit and nuts together.   In  a separate large bowl, melt butter or margarine in the microwave.   Add marshmallows to melted butter and cook in microwave about 2 minutes or until melted.  Add vanilla or almond extract and stir well.  Add all of the dry ingredients together a stir quickly.  Using greased hands press mixture into a greased pan and let cool.  Cut into 16 bars and wrap well.  These keep for at least three months.  Freeze for long term storage.
