Beef Jerky
Thanks to my friend Vicky Wallace, who shared this recipe with me! We make beef jerky for all of our canoe trips.
Ingredients:
- 2lbs. beef roast (buy the best cut you can afford)
- 1/2 cup liquid smoke (this is a sauce you can find in the grocery store if you look long enough)
- 3 cups soya sauce
- 1/2 lb. brown sugar
Directions: combine all marinade ingredients in an airtight container. Slice the beef into thin strips. Marinade the meat in the sauce for a minimum of 10 minutes (all night for Vicky's taste). Lay out slices of meat on a dehydrator (or on a cookie sheet in an oven set at 170o, let dry until well cooked and chewy.
